Not all sugars are created equal. Sugar loaves, better known as Qelb Sukar in darija has a distinctly different taste than your regular granulated sugar and is therefore more fit to be used in Atay. In our embroidered illustration we have portrayed the q.s. in one of its earliest packaging. The 2kg conical loaf is broken with a special hammer made of copper or silver, placed in a silver bowl and the big chunks of deliciousness are then used in Atay. If you don't have such fancy tools, wrapping the q.s. in a teatowel and hitting it with the back of a knife or stone - also works. Disclaimer: try at your own risk.
